No problem - you can change secondaries after a certain point in each of the campaigns, so no need to delete/restart

E/Me isn't a mistake, in fact in some areas it's the perfect secondary for what it requires. I have several solo farming builds that revolve around E/Me, i've only ever used /Mo secondary once on my ele and it wasn't great for me IMO

E/Me is what I started out with. Personally you will almost always just wind up using pure ele skills

E/Me lets you nuke with Arcane Echo and farm with the Earth Tank build.
E/Mo lets you bring Rebirth into PvE and farm as a 55 HP monk.
Each profession configuration has its own benefits, which is why I usually recommend going for a secondary in which you don't have a lot of skills unlocked. That way, if you change your mind later, you'll be able to get skills cheaper (with tomes) than they would normally cost (from traders), even if not for free (from quests) as you would while going through the game.

unless you are running something that really needs echo, glyph of renewal works fine and glyph of swiftness works for obsidian flesh.
E/Mo --> Mind Blast + Heal Party/Aegis (now nerfed)

Mesmer is a fine profession to start with, and even end with. You can change it in factions at Senji's Corner, in Prophecies at Droknor's Forge after ascension, and in Nightfall at the Command Post after all quests.

Started out with monk secondary but added later the mesmer secondary too
they are both the two most used as secondary, followed by Assassin and Dervish secondary

E/Mo is generally used to power expensive but powerful Monk abilities, such as Heal Party and Aegis, using Elementalist energy management, such as Mind Blast and Ether Prodigy.

E/Mo was very popular pre nightfall when Ether Prodigy ruled.
E/Mes was very popular pre nightfall and even factions when echo Nuker ruled
both have other valid options post nightfall.
Ele functions perfectly fine without a secondary profession.
so it doesnt really matter what you chose, plus you can change secondaries later... Crystals Desert post ascension offers secondary profession quests.
profession changer in Senji's Corner and Command Post offers secondary profession change for 500g.

Offhand, I don't think any other secondaries are as viable as E/Me if you're not going to invest that many points in it.
Although [skill]Arcane Echo[/skill] is not that great, some spells have long recharges so I think it's unavoidable unless you are running [skill]Glyph of Renewal[/skill]. That's a fundamental problem with the elementalist class, a lot of 30 recharge skills. Meteor Shower is by far the most popular to use [skill]Arcane Echo[/skill] with due to the 60 recharge. I'd rather [skill]Glyph of sacrifice[/skill] it to remove the abysmal 5second cast time though.
Other than E/Me and E/Mo, some people run E/D (especially with earth's numerous enchantments) for [skill]Mystic Regeneration[/skill] as a cover enchantment on 8 Earth Prayers. You could probably use [skill]Vital Boon[/skill] also if you're speccing 8 Earth Prayers.
EDIT: wow the icons break the line spacing pretty bad.

Another great combo would be being a E/W.
You'll be able to get good skills such as the Healing Signet, Sprint, and Endure Pain abilities. Even though I've never used one melee weapon once, these skills are extremely useful for running out of a sticky situation, and then healing yourself.
